Trick with roasties donks let shake them right up get em fluffy then let them cool right right down then put them in a hot oven makes sizzle when they hit the pan same with yorkshires

The trick to the chips is dripping. Collect the rendered fat from your meats and use it for frying. Flavour is amazing

Coating them in semolina before the final roast to give a nice crisp to them.
